Grüner Veltliner is a hidden gem, its crisp green apple taste lends it well to those who are a fan of Sauvignon Blanc but want to try something new. Grüner is the perfect friend for a Peach Burrata Salad, it's vibrant enough to go with the ripeness of the peach and the fattiness of the burrata but also the acidity gives the freshness that keeps this dish all light and summery.

Ingredients:
- 2 ripe peaches, sliced into wedges
- 1 small courgette, peeled into thin ribbons
- Juice of ½ lemon
- 1 tbsp extra virgin olive oil (plus more for drizzling)
- 1 ball of burrata (approx. 125g)
- A handful of fresh basil leaves
Recipe
Method:
1) Peel the courgette into long, thin ribbons using a vegetable peeler and toss the
ribbons in a small bowl with lemon juice, a drizzle of olive oil and a good pinch of
salt.
2) Arrange the peach wedges on a plate, then add the courgette ribbons.
3) Tear open the burrata and nestle into the peaches before scattering with basil
leaves, drizzling with olive oil and finishing with a little salt and pepper.
